Separate the egg whites from the yolks and set aside.
In a bowl, combine the egg yolks with a pinch of salt, the melted butter and the grated Grana Padano and mix well.
Add the sieved flour and the yeast, mix well, and allow to rest for 30 minutes.
Whisk the whites until stiff, add a pinch of salt and combine with the mixture.
Grease a non-stick pan with a drizzle of olive oil and make the blinis by placing spoonfuls of mixture in the pan and cooking for 2-3 minutes on each side, turning them gently with a spatula.
Put 1 teaspoon of crème fraîche and a slice of salmon on each one and garnish with lemon, chives, and Grana Padano shavings.
Serve the blinis with a drizzle of olive oil and a pinch of pepper.
