Preheat the oven to 185° C.
Mix the apricots, Grana Padano, honey, and pistachios in a bowl using a fork or spoon.
Roll out the puff pastry and cut into 5x3cm long strips.
Place the filling in the middle of the strip and roll the dough into a spiral shape.
Brash with a beaten egg and top with black onion seed and extra grated Grana Padano.
Place in the oven for 25 minutes.
