    Baked vegetable, potato and Grana Padano skewers

    Ingredients

    2 medium courgettes
    2 medium potatoes
    2 medium carrots
    50 g Grana Padano
    50 g breadcrumbs
    Cherry tomatoes
    Basil
    Extra virgin olive oil
    Salt

    Preparation

    STEP 1

    Cut the vegetables and potatoes into chunks, thread onto a skewer, alternating the different kinds, and dredge the skewer in the breadcrumbs.

    STEP 2

    Arrange the skewers on a baking sheet covered in parchment paper, dress with a drizzle of olive oil and sprinkle with Grana Padano.

    STEP 3

    Bake in a preheated oven at 200 °C for 30-35 minutes, turning the skewers every so often so that they cook evenly.

    STEP 4

    Serve hot with basil leaves and a sprinkle of Grana Padano.
